Capsicum – 2
Potato – 3
Onion – 1 (large)
Tomato – 1 (large)
Coriander leaves – 1/4 cup
Ginger garlic Paste – 1 tsp
Mustard Seeds – 1/2 tsp
Cumin seeds – 1/2 tsp
Turmeric powder – 1/2 tsp
Red chilli powder – 1 tsp
Cumin powder – 1/2 tsp
Coriander powder – 1/2 tsp
Garam masala powder – 1/3 tsp
Salt to taste – Salt according to taste

Method of making potato capsicum vegetable – Step by Step
First of all, we will take 3 to 4 spoons of mustard oil in a pan. If you use mustard oil for this vegetable, it will become more tasty, otherwise you can use any other oil.
- As soon as the oil becomes hot, add half a spoon of mustard, cumin and one-fourth asafoetida in it and let it crackle well, then add chopped green chilies and ginger-garlic paste in it.
- Mix all these well for a while, then add a finely chopped onion in it. Cook it for 1 to 2 minutes.
- When the onion is cooked a little, then add 3 to 4 chopped potatoes in it and also add turmeric and salt according to the potatoes.
- Then mix all these well and cook it covered and keep stirring the vegetable after some time.
- Now after 7 to 8 minutes add 1 chopped tomato to the vegetable and add 1 teaspoon red chili and coriander powder to it.
- Then mix all these again and cover and let it cook for some time.
- When the tomato starts becoming a little soft then add 2 chopped capsicum to it.
- Then again mix all these well and cover and cook for 5 to 6 minutes.
- By now your vegetable will be ready but you can add garam masala or any vegetable masala to it for taste.
- Finally add some coriander to the vegetable and mix and enjoy the vegetable with roti or paratha. Thank you.
